I am a big lover of pancakes. And donuts (the local style), and anything that matches that (covrigi, gogosi, cozonac - you name it). The pancakes used to be a favourite, but I am on a gluten-free diet. How could I survive without a pancake with a generous drizzle of maple syrup and a handful of fresh berries? So here is my challenge that seemed almost impossible: making pancakes without flour.
At first, the idea seemed crazy. How could I make pancakes,
those fluffy, golden stacks of comfort, without their main ingredient? Still,

routines, suddenly felt like a lab for my culinary experiment (ok, I am exaggerating a bit here :-)).
Mixing the batter, I felt a mix of excitement and

What started as a doubtful experiment ended in success, leaving me grateful for the endless possibilities that come with trying something new.
So, in my cozy kitchen with the lingering scent of fresh
pancakes, I found joy in innovation and discovery. The oat and egg pancake
recipe not only expanded my culinary skills but also taught me an important
lesson: with an open mind and a brave heart, there's nothing I can't achieve.
